U.S. Official Documents: The Army maintains some goodies. There's the Center for Military History, the Foreign Military Studies Office, the training materials repository, and the Center for Army Lessons Learned. There's a potentially interesting Air Force research site. I'd call the United States Naval Institute at least semi-official.

General Military Sites: How long has Jane's been around? (Well, Fred T.'s first publication was Fighting Ships for 1898.) The Nafziger Collection is a host of order of battle information available at reasonable prices. There's the Society of Twentieth Century Wargamers for this century.
Land: Tank fans might like the Heavy Metal site, or the AFV News.
Sea: Andrew Toppan's Haze Gray and Underway site has largely moved to the USS Salem museum site.
Air: Fighter Tactics Academy is unofficial but interesting.
Historical Periods: There's the Armchair Commander's Guide to the Napoleonic Era.
